Pour eggnog into a bowl; add pudding, extract and nutmeg.
Beat with mixer on low.
(Or pour into a stand mixer and beat)
Let stand 5 minutes.
Fold in 2 cups of cool whip.
Spoon mixture into piecrust.
Chill until firm.
Spoon on remaining cool whip.
Sprinkle with nutmeg if desired.
