Yellow Squash Casserole

Description
This recipe is a tradition that is a must at every holiday meal. My youngest children have always enjoyed this casserole and beg for more. Even better -- it is easy to make.
Ingredients
- 2 lb yelow squash
- 1⁄2 C minced onions
- 1 3⁄4 C ritz cracker crumbs
- 2 ea eggs
- 1⁄4 C butter or oleo
Instructions
- Saute squash and onions in 1 stick butter or oleo until soft.
- Add eggs and 1 cup Ritz cracker crumbs. If too dry add just a little milk to moisten. If not firm enought add more Ritz cracker crumbs. To crush crumbs simply put Ritz crackers in a freezer ziploc bag and crush with your rolling pin. The kids love to help with this.
- Put in buttered baking dish.
- Sprinkle remaining 3/4 cup of Ritz Cracker crumbs on top and dot with butter.
- Bake at 375 degrees for about 30 minutes.
Notes
This is one of those family recipes that I don't usually measure. I have tried to get as close as possible to what I actually do but feel free to change the measurements as needed. The casserole should be fairly firm without being dry. It is always the biggest hit of the side dishes.
