Breakfast Casserole

This casserole is a favorite of my entire family - at home and extended - my mother first taught me to make it and it brings back wonderful memories of her everytime I make it.

Ingredients

  • 1 lb sausage - your favorite flavor
  • 16 oz grated cheddar cheese - extra sharp
  • 1⁄2 doz eggs - scrambled
  • 2 ea refrigerated crescent rolls (8 per package)

Instructions

Pre-heat oven to 350 degrees.

Scramble eggs - this can be done in the microwave - whisk eggs and milk with salt and pepper together in microwave safe bowl (spray with non-stick spray first) for 5 minutes, stir, then repeat every minute till fully cooked.

Brown Sausage and drain

Spray bottom of 9x13 glass baking dish with non-stick spray and lay one can of rolls in the bottom - press seams together and push to sides of pan.

Place cooked eggs on top of rolls, then sausage and then cheese.

Gently unroll the other package of rolls and place on top of layers, gently pulling towards the edges as far as possible

Bake for 15 - 20 minutes or until golden brown on top and bottom.

Notes

Can be made the night before and put into the fridge BEFORE baking.  May take a few more minutes in the oven if you do this due to everything being cold.
